Nat Bletter and David Elliott, co-founders of Madre Chocolate, make their chocolate from lightly processed cacao to preserve the healthy antioxidants while maintaining a deep, rich flavour.

Both have interesting backgrounds: David specialises in environmental justice issues in cacao growing regions of Ecuador and Bolivia, while Nat is an ethnobotanist & still works at the University of Hawaii researching plants & migration in South East Asia. The Madre Chocolate logo is based on the Mayan glyph for cacao, in recognition of how the highly developed Mayan civilization helped make chocolate what it is today.
