This dark chocolate is made from beans grown at one of the highest altitude cacao plantations in the world. This increases the levels of cacao butter in the beans and translates into a natural creaminess.
Nat Bletter and David Elliott, co-founders of Madre Chocolate, make their chocolate from lightly processed cacao to preserve the healthy antioxidants while maintaining a deep, rich flavour.
Both have interesting backgrounds: David specialises in environmental justice issues in cacao growing regions of Ecuador and Bolivia, while Nat is an ethnobotanist & still works at the University of Hawaii researching plants & migration in South East Asia.
