Mexico is the latest source for Michel Cluizel’s single plantation bars. While it is only 66% it has robust cocoa flavours with the added complexity of dried fruit flavours and some mild acidity.
The Cluizel family has been processing cocoa beans for 70 years and three generations. Now one of the larger bean to bar makers, they have over 200 staff based at a workshop in Normandy, where they make elaborate chocolates and cocoa products.They have worked hard to establish direct relationships with five key cocoa growers around the world. This works towards their principle of ‘human friendly’ chocolate, which is complemented by their goal to also make environmentally friendly. See more
