“A single origin chocolate with a 70% cacao content, which is very mild for a dark chocolate, presents with a surprising cream caramel character. We’ve used cacao cultivated by the R­os de Agua Viva Cooperative. They grow their cacao beans in mixed crop cultivation with other plants, a method which is beneficial to the environment as well as fostering biodiversity. This special cacao is accompanied here by just a bit of raw cane sugar.

Taste notes: very mild, chocolatey with notes of caramel, cream and coffee

Josef Zotter started his confectionery business at age 26 in southern Austria. He won awards for his unusual creations and started to expand, but then had to decide whether to focus on confectionery or chocolate.
