Chocolate made from the bean, or as Federation Chocolate like to call it, 100% Full Bean. Maurice and Helen are still working up to making all their own chocolate but we love that they are transparently displaying the proportion they make on each bar. This bar is made with their organic Peru beans, from the Junin in Peru, right up near the Amazon Jungle. The sea salt is produced off the east coast of Tasmania.
This bar is past it’s best before date (SEP2022) – it will still be great to enjoy but could start to loose it’s temper
Maurice grew up visiting his local chocolate factory. So when he and wife Helen saw the opportunity to take over a 30 year old confectionary company, he couldn’t say no. Now, he and Helen delight in recreating and sharing the sensory delights of chocolate making with visitors to the Coal River Valley in Tasmania.They make a range of confectionary, and have recently introduced their two-ingredient bean to bar chocolate. They like to showcase cocoa beans from small farmers around the world, with a focus on finding sustainable and ethical cocoa products. And after COVID, they relocated from Hobart to Richmond, where they are building a unique chocolate experience space at Every Man and His Dog Vineyard. This exciting new chapters offers an even more immersive experience - pairing chocolate and wine. See more
