Nat Bletter and David Elliott, co-founders of Madre Chocolate, make their chocolate from lightly processed cacao to preserve the healthy antioxidants while maintaining a deep, rich flavour.
Both have interesting backgrounds: David specialises in environmental justice issues in cacao growing regions of Ecuador and Bolivia, while Nat is an ethnobotanist & still works at the University of Hawaii researching plants & migration in South East Asia.
