Gila and Joel Dar arrived in Costa Rica in 2014, and soon saw their first raw cocoa bean. Curious about how this strange fruit was turned into the ‘loved-by-all’ substance chocolate they began a journey to learn all they could about the origins and making of chocolate.
In April 2016 they landed in Denver Colorado and started the American chapter of their story. They opened a small chocolate factory, and love handcrafing chocolate from the bean and connecting with fellow chocolate lovers.
Each bar of Dar chocolate features a beautiful piece of ‘bloom art’. Created by the fat bloom which appears as white particles on the surface of partially couveture chocolate, it is an evocative image.
