Ucayali River Cacao is the name of a centralised fermentary that works with roughly 400 cocoa farmers along the Ucayali River outside of the Peruvian city of Pucallpa. The region has seen much unrest over the years and the premium paid to farmers for there cacao is creating a sustainable and clean alternative to illicit crops. The fermentation process has been tested and evolved over recent years to make it one of the best quality cacao on the craft chocolate market. Yoon refers to the cacao as “the most beautifully prepared clean cocoa beans I’ve ever seen visibly and the flavours are equally beautiful“. She describes this bars as having “mild chocolate undertone, it has gently lingering fruity notes like fig and orange with no bitterness.”
