Marmalade! What a citrusy aroma to be greeted by! This is immediately followed by flavour notes of panela sugar coated cacao nibs and candied peel, with tropical fruit notes of plantain, mangosteen, and honey melon shortly joining. A malty/caramelly note of creamed honey mixed with cacao powder and yuzu/lemon appear mid-melt and provide a lingering tangy aftertaste to this smooth and creamy bar!
Situated on the most southerly of the larger islands of the Philippines – and in the “Goldilocks zone” 10 degrees either side of the equator – the cocoa farmers of Mindinao Island have the ideal combination of tropical rainforest and volcanic soil. It is perfect for growing a cocoa bean with a distinctive chocolate flavour complimented by layers of citrus, honey and caramel notes.
