With a background in viticulture, Luke Spencer was a natural in his role restoring a cacao plantation in Vanuatu. It was here he fell in love with chocolate and began his journey to become one of the flag bearers of Australian direct trade, bean to bar chocolate.
In his shed in Mudgee, Luke roasts, grinds and tempers the beans he sources directly from 2-3 families he works with in Malekula, Vanuatu. He visits the farmers twice a year during the cacao harvest, and pays an above fair price for the beans which has a huge impact on the local community. See more
